My mum's Jollof rice recipe

Rich and spicy Jollof rice with chicken.




Hey guys, Here is the transcript for my latest episode. I also promised you a surprise so here it is. It is my mum's Jollof rice recipe. Hope you enjoy making and eating it!



Jollof rice

  • A half cup of rice.

  • Vegetable oil.

  • Onions.

  • Garlic.

  • Watered down tomato paste.

  • Obe sauce(Blended peppers and tomatoes).

  • Shrimp/Crayfish.

  • Curry.

  • Thyme.

  • Black pepper.

  • Seasoning cubes.

  • Chicken/Meat stock.

  • Salt.

  • Water.

Directions

  1. Wash and Per boil rice so it's not too soft.

  2. Sautee the onions and garlic in a pot with vegetable oil.

  3. Add the watered-down tomato paste to the pot and fry it for 5 minutes.

  4. Add your shrimp/Crayfish into your pot to fry.

  5. Add curry, thyme, black pepper, and seasoning cubes.

  6. Add the Obe sauce(Blended peppers and tomatoes) to the pot and fry it until the sauce becomes really thick and the oil floats to the top.

  7. Add the chicken/meat stock then add the rice.

  8. Add salt to taste.

  9. Add enough water and leave to simmer

  10. Serve with fried chicken and coleslaw is optional
